Chicken breast: 700 grams
Eggs: 2
Mozzarella cheese: 1 cup
Garlic powder: 1 teaspoon
Salt and black pepper: To taste
Chopped basil and parsley: 2 tablespoons each
Chopped onion: 2 tablespoons
Paprika powder: 1 teaspoon
Breadcrumbs: 2 tablespoons
First, remove the bones from the chicken breast and cut it into small cubes.
Next, in a suitable bowl, mix the eggs with the herbs and whisk well. Then, add garlic powder, breadcrumbs, paprika, and a pinch of salt and pepper, and stir with a spoon.
Now, add the chopped chicken to the mixture and coat it well. Cover the bowl with plastic wrap and refrigerate for 30 minutes to allow the flavors to meld.
After marinating the chicken, place a pan over medium heat and add some oil to warm it up. Then, pour the mixture into the pan and flatten it out. Once one side of the cutlet is cooked, flip it to brown the other side.

To prepare this sauce, first peel the tomatoes after washing them, then grate them finely, or you can puree them in a food processor or blender.
Grate the onion and garlic finely after peeling them.
Next, heat a pan over low heat and add some olive oil or butter. Once hot, add the onions and sauté until soft and translucent. Then, add the garlic and sauté until golden brown.
At this stage, create a space in the middle of the pan and add the tomato paste. Sauté it for a few minutes to reduce its raw taste and enhance its color.
Then, add the pureed tomatoes, along with thyme, salt, and pepper. Sauté everything until the tomato water evaporates and the sauce thickens to your desired consistency.
Add lemon juice, and finally, stir in the chopped parsley and basil. Continue stirring until the sauce reaches the desired thickness.
