  • White rice: 100 grams

  • Brown rice (optional): 100 grams

  • Split peas: half a cup

  • Onion: 1 large, chopped

  • Dolma herbs: a handful

  • Sliced almonds: 50 grams

  • Tomato paste: 1 tablespoon

  • Dried cherries: 50 grams

  • Chicken stock: 2 cups

  • Apple: 1, chopped

  • White vinegar: 2 tablespoons

  • Garlic: 1 clove, grated

  • Vegetable oil: 2 tablespoons

  • Salt and pepper: to taste

  • Cinnamon: 1 teaspoon

  • Mixed spices: 1 teaspoon

  • Brown sugar: 2 tablespoons

How to Prepare Stuffed Pumpkin

Step 1:

Preheat the oven to 400°F.

Step 2:

Toast the almonds in a pan for a few minutes and set them aside.

Step 3:

Once the oven is preheated, place the pumpkins whole in the oven and bake for 45 minutes to 1 hour until they become soft. Then, let them cool. Afterward, scoop out the inside with a spoon.

Step 4:

While the pumpkins are in the oven, heat the oil in a pan and sauté the onion and garlic until they become translucent. Now, add the cooked rice along with the split peas and partially cooked brown rice, and sauté for 5 minutes. Add the tomato paste, herbs, and spices, then pour in the chicken stock and cook on low heat for 30 minutes. Add the almonds and remove the mixture from the heat.

Step 5:

Once the mixture has cooled slightly, mix in the chopped apple. Use a large spoon to stuff the pumpkins.

Step 6:

After stuffing all the pumpkins, sprinkle a teaspoon of sugar on top of each, and pour two tablespoons of apple juice over them. Close the pumpkins and return them to the oven. This time, bake for 45 minutes at 350°F. Afterward, arrange them on a serving dish and serve with bread and salad.
