According to Saed News, citing Hamshahri, this dish, known as “Fat Choy,” is made from an ancient plant resembling seaweed. Historically, the Chinese used this plant to prepare a noodle-like soup served during Lunar New Year for good luck. Because of its striking resemblance to human hair, it was nicknamed the “hair vegetable” and traditionally grew in arid and desert regions such as Gansu, Shanxi, and parts of Mongolia.

Today, a new wave of street chefs lightly sauté or grill the plant and serve it with special sauces to eager customers. Sales of this unusual snack are rapidly spreading through China’s alleyways, offering not just a unique taste but also the one-of-a-kind experience of “biting into real hair.”
