Why Does Samanu Become Bitter?

According to Saednews, Samanu is one of Iran’s traditional and beloved sweets, especially prepared during Nowruz and other special celebrations. This traditional dessert, with its distinctive flavor and texture, often brings back fond childhood memories and family celebrations. However, one common problem that can occur when making Samanu is bitterness.

Samanu usually becomes bitter because the wheat sprouts have grown too much, old flour has been used, or the wrong amount of flour has been added. To prevent bitterness, use fresh, healthy wheat for sprouting and do not leave it soaking in water for more than 48 hours.

1. The Quality of the Wheat

The first factor that can affect the bitterness of Samanu is the quality of the wheat used. Immature wheat or wheat that has not been stored properly may give Samanu a bitter taste. The variety of wheat can also have a significant effect on the final flavor.

2. Improper Preparation

The preparation process can also directly affect the bitterness of Samanu. To make Samanu, the wheat must first be soaked and allowed to sprout. If the soaking or sprouting time is incorrect, the Samanu may develop a bitter taste.

The recommended method is to soak the wheat for at least 24 hours and then allow it to sprout.

3. Insufficient Washing

Not washing the wheat thoroughly before sprouting can leave bitter residues behind. Some people may fail to wash the wheat properly because they are short on time or simply overlook this step. This can contribute to a bitter taste.

To prevent this, wash the wheat several times with cold water to remove all impurities and unwanted residues.

4. Excessive Heat During Cooking

Cooking Samanu at a high temperature can be another cause of bitterness. If the Samanu is overcooked or the heat is high enough to burn the ingredients, the final result may taste bitter.

For the best results, cook Samanu over low heat and stir it gradually and consistently to help maintain its flavor and texture.

Some people add ingredients such as sugar, walnuts, and other nuts to enhance the flavor of Samanu. However, adding these ingredients in excessive amounts or at the wrong stage of cooking may affect the taste and potentially contribute to bitterness.
