How to Make Homemade Croissants

Prepare the Dough

To make these delicious croissants, first crack the egg into a bowl. Add the lukewarm milk, yeast, sugar, and salt, then whisk until the ingredients are well combined.

Gradually add the flour while mixing well. Once the mixture forms a dough, transfer it to a work surface and knead for about 8 minutes.

After kneading, spread the softened butter, which has been brought to room temperature, over the dough. Continue kneading until the butter is fully incorporated. Knead for another 2 minutes, then cover the dough and let it rest for 20 minutes.

Next, divide the dough into approximately 60 g portions. This amount should give you around 9 pieces. Cover the dough balls again and let them rest for another 15 minutes.

Create the Buttery Layers

Lightly flour your work surface. Roll each dough ball into a circle approximately 20 cm in diameter.

Sprinkle a little flour over a tray or plate and place the first dough circle on it. Spread a thin layer of softened butter over the surface.

Roll out the next piece of dough in the same way and place it on top of the first one. Spread butter over it again. Continue this process until all 9 dough circles are stacked, making sure to spread butter between every layer.

Cover the plate and dough with plastic wrap. Place it in the freezer for 15 minutes, followed by 30 minutes in the refrigerator.

Shape the Croissants

Remove the dough from the refrigerator and carefully transfer it to a lightly floured work surface.

First, gently press the dough with your hands. Then use a rolling pin to roll it into a large circle approximately 45 cm in diameter.

Using a pastry cutter or sharp knife, divide the circle into 12 equal sections, similar to pizza slices.

Place some chocolate chips or pieces of chocolate along the wide end of each dough triangle. Starting from the wide end, gently roll each piece toward the pointed tip to create the classic croissant shape.

Proof and Bake

Arrange the shaped croissants on a baking tray and brush the tops with egg yolk.

Cover the tray with plastic wrap and let the croissants rest for about 1 hour, allowing the dough to rise and become light and puffy.

Preheat the oven to 180°C (350°F). Bake the croissants for approximately 20 minutes, or until they are beautifully golden and fully baked.

Your homemade chocolate croissants are now ready to serve. Enjoy them warm for breakfast, as an afternoon treat, or alongside your favorite coffee or tea!
