According to Saednews, This soft and flavorful scallion bread is simple to make and perfect for serving with soup, salad, or as a delicious snack on its own. Fresh herbs, green onions, and crunchy walnuts give this homemade bread a rich aroma and satisfying texture.
250 g all-purpose flour
1½ cups milk
2 teaspoons salt
1 teaspoon sugar
1 tablespoon instant yeast
½ teaspoon ground ginger
100 g chopped scallions (green onions)
100 g chopped fresh parsley and chives (or similar fresh herbs)
100 g chopped walnuts
Vegetable oil, as needed
1 egg yolk
1 tablespoon milk
1 tablespoon brewed saffron (optional, for color and flavor)

Warm the milk in a small saucepan until it is lukewarm. Stir in the salt, sugar, and instant yeast. Let the mixture rest for several minutes until the yeast becomes active and foamy.
In a large mixing bowl, combine the flour and ground ginger. Pour in the yeast mixture and mix until a dough forms. Lightly oil your hands and knead the dough until it becomes smooth and elastic.
Grease a bowl with 1 tablespoon of vegetable oil and place the dough inside. Cover it with a clean kitchen towel and let it rise at room temperature for about 2 hours, or until doubled in size.
Punch down the dough to release the trapped air, then knead it for about 10 minutes. Add the chopped herbs, scallions, and walnuts, and continue kneading until they are evenly incorporated.
In a small bowl, whisk together the egg yolk, milk, and brewed saffron. Brush this mixture evenly over the surface of the dough.
Transfer the dough to a baking tray lined with parchment paper.
Bake in a preheated oven at 180°C (355°F) for approximately 30 minutes, or until the bread is golden brown and fully baked.
Allow the bread to cool slightly before slicing and serving.
This savory herb and scallion bread pairs wonderfully with:
Fresh green salads
Creamy or vegetable soups
Cheese platters
Breakfast spreads
Butter or cream cheese
It also makes a delicious and wholesome snack enjoyed on its own.

Use fresh herbs for the best flavor.
Lightly toast the walnuts before adding them to the dough for a richer, nuttier taste.
If saffron is unavailable, the egg yolk and milk wash alone will produce a beautifully golden crust.
Store leftover bread in an airtight container for up to 2 days, or freeze slices for longer storage.
