Take portions of the mixture roughly the size of a tangerine and shape them into round, slightly flattened patties using one hand as a base and the other to gently press. Ensure the edges do not crack; if they do, use extra mixture to seal them.

4. Cook the kuku in the pan and oven:
Preheat the oven to 176°C (350°F). In an oven-safe pan, heat a little oil and lightly fry each side of the kuku over low-medium heat for about 2 minutes until slightly golden. Transfer the pan to the oven and bake for another 10 minutes until fully cooked.

5. Serve:
Serve the chicken and apple kuku warm with fresh bread, tomatoes, and herbs.
