According to the Culinary Service of Saed News, falafel is one of the simple and inexpensive Arabic dishes that has become popular worldwide due to its great taste.
Ingredients (for Simple Falafel):
Chickpeas: 2 cups
Potato: 1 medium
Parsley: 1 small bunch
Onion: 1
Garlic: 4 cloves
Falafel spice: 1 teaspoon
Ground coriander: ½ teaspoon
Cumin: ½ teaspoon
Paprika: ½ teaspoon
Curry powder: ½ teaspoon
Red pepper (chili): ½ teaspoon
Salt and black pepper: to taste
Turmeric: to taste
Oil: as needed (for frying)
Simple Falafel Recipe – Step-by-Step
Step 1: To make delicious and simple falafel, start by soaking chickpeas in a bowl of water the night before. If possible, change the water several times to soften the chickpeas and eliminate any bloating effects.
Step 2: Place the soaked chickpeas into a mixer or meat grinder. Peel the potato, onion, and garlic, and add them along with some parsley to the mixer or grinder. Mix the ingredients coarsely.
Step 3: Note that the falafel mixture should not turn into a puree — small chickpea pieces should still be noticeable. If you’re using a meat grinder, it's better to grind the mixture twice for the ideal texture without making it mushy.
Step 4: Transfer the falafel mixture to a suitable bowl. If the mixture releases water, add a little chickpea flour and mix until the texture becomes more cohesive. The mixture should not be too stiff.
Step 5: Add falafel spices along with ground coriander, cumin, paprika, curry powder, red pepper, salt, black pepper, and turmeric. Knead the mixture for a few minutes by hand so the spices are fully absorbed.
Step 6: Once the mixture is ready, cover the bowl with plastic wrap and place it in the refrigerator for 30 minutes to an hour to let the flavors combine. After the resting time, take the bowl out of the fridge.
Step 7: Heat a deep frying pan and pour in enough oil so the falafel pieces can float while frying. Dip the falafel mold in water to moisten it.
Step 8: Scoop the mixture into the mold and flatten it with the back of a spoon. Then place it into the hot oil and allow it to cook through. Keep the heat low and make sure the oil is hot and bubbling.
Step 9: Once one side of the falafel is golden, flip it to cook the other side evenly. Place the fried falafel on a paper towel or metal rack to drain excess oil. Serve hot with your favorite sides.
