With its unique aroma and taste, it’s no wonder that people from Gilan are so fond of it.
1 cup of wheat flour (preferably whole wheat)
1/2 cup of butter or ghee
1 cup of sugar
2 cups of water
1/4 teaspoon of saffron (soaked in warm water)
1/4 teaspoon of cardamom powder
Crushed nuts (optional, for garnish)
Rosewater (optional, for fragrance)
Prepare the syrup: In a saucepan, combine sugar and water. Heat it over medium heat until the sugar dissolves completely. Once dissolved, add the soaked saffron and cardamom powder. Allow the syrup to simmer on low heat for 5 minutes. Remove from heat and set aside.
Roast the flour: In a separate pan, melt the butter or ghee over low heat. Once the butter is melted, add the wheat flour. Stir continuously to ensure the flour roasts evenly and does not burn. Continue roasting for about 15 minutes until the flour turns golden brown and emits a rich, nutty fragrance.
Combine the syrup and flour: Gradually add the prepared syrup to the roasted flour, stirring constantly to avoid lumps. Continue stirring until the mixture thickens and becomes smooth. This process may take around 5-7 minutes.
Final touches: Once the mixture has thickened to a halva-like consistency, remove it from the heat. If you like, you can add a few drops of rosewater to enhance the fragrance.
Garnish and serve: Transfer the halva to a serving dish and garnish with crushed nuts, if desired. Let it cool slightly before serving.
Enjoy your delicious Ziyabari Halva with a unique taste and aroma that will surely transport you to the heart of Gilan!
