Ingredients for one person:

  • Iranian rice: 1 cup

  • Salt: ¼ teaspoon

  • Butter: 50 grams

  • Vegetable oil: 1 tablespoon

  • Saffron extract: 2 tablespoons (thick)

Instructions for making molded saffron rice:

Step 1:
To prepare molded saffron rice, first soak the rice with a little salt for 2 to 3 hours. Then, put the rice into a suitable pot and add enough water so that it is about one finger above the level of the rice.

Step 2:
Next, add the salt and oil, and place the pot on heat until the water boils, and the water in the pot is completely absorbed. A key point when preparing saffron rice is to use a single-serving non-stick pot.

Step 3:
After the water in the pot has evaporated, remove the rice from the pot. Then, add one-third of the rice to the pot with butter and saffron extract, and mix well with a spoon until the rice is completely combined.

Step 4:
In this step, press the saffron rice mixture into the bottom of the pot with the back of the spoon to set it. Then, add the remaining rice to the pot and press the plain rice down with the back of the spoon to make it uniform and moldable.

Step 5:
Now, place the rice on low heat to cook for 45 minutes to an hour. Then, place a plate on the lid of the pot and flip the pot onto the plate so that the rice comes out as a molded shape.

Step 6:
An important note about the ingredients for molded rice is that if you are making this rice for a larger number of people, you don't need to multiply the butter and saffron by the number of servings, and you will need less butter and saffron.
