Quick and Hassle-Free Recipe For Zolbia Without Yogurt, Yeast, and Resting Time / Important Tips for Making Crispy Zolbia.

Ingredients for Zolbia:

  • 1 cup white flour

  • 1 cup water

  • 1 tablespoon flat baking powder

  • Saffron (optional, as desired)

Ingredients for Syrup:

  • 2 cups sugar

  • 1 cup water

  • 4-5 cardamom pods

  • 1/4 cup rose water

  • Saffron to taste

  • 1 tablespoon glucose (optional)

🍭 Tip: Mix the water and flour until you get a smooth and slightly thick batter. The smaller the opening of the piping bag, the thinner your Zolbia will be. If your Zolbia breaks apart or doesn't hold shape when frying, the batter is too runny, so add a bit more flour. After dipping the Zolbia in syrup, do not stack them on top of each other, as they will become soft.
