Ingredients:

  • 1 cup of all-purpose flour

  • 1/2 cup of grape syrup

  • 25 grams of butter

  • 1/2 cup of hot water and rose water mixture

  • Chopped walnuts (as needed)

Preparation:

To make this delicious halva, first place the flour in a pan and set it over medium heat. Toast the flour for about 15 minutes until the raw smell disappears.

After this time, add the butter and toast for another 5 minutes.

Now, mix the hot water and rose water with the grape syrup and add it to the flour. Remove the pan from heat and stir quickly to prevent the flour from forming lumps.

Once the flour is fully dissolved with the syrup and water, return the pan to heat and stir continuously until the liquid evaporates.

Finally, line a mold with plastic wrap and pour the halva mixture into the mold. Smooth the surface and sprinkle chopped walnuts on top. Place the mold in the refrigerator for 1 hour.

After an hour, take the mold out of the refrigerator. Turn the halva out of the mold and cut it into diamond shapes with a sharp knife. Enjoy!

Important Notes:

You can store this halva for up to 1 month in an airtight container in the fridge.

You can use any type of syrup such as mulberry syrup, fig syrup, or date syrup to make this halva.

Grape syrup, or "Doshab," is a sweet and thick substance usually made from sweet grapes. It has a warm nature and is highly recommended for consumption in autumn and winter. It is rich in vitamins C, B, A, and minerals like calcium, potassium, iron, and magnesium. Grape syrup is also very beneficial for boosting the immune system.

High-quality grape syrup should have a sweet taste of grapes, and any unnatural sweetness indicates low quality. Traditional grape syrups are usually darker in color because they are made with direct heat.

As we know, rose water is the aromatic extract of the rose flower, and the best quality is made in Kashan and Meymand, Fars. Many store-bought rose waters are not pure and do not have the original rose scent. Pure rose water smells like the rose flower and should not have a sour or fermented odor. It should be clear, light, and without sediment, and it has a slightly bitter taste. When buying rose water, be sure to check for these qualities.
