300 g meat (a combination of lamb and beef)
3 onions
1 teaspoon salt
1 teaspoon black pepper
½ teaspoon red chili powder
1 teaspoon coriander seeds
1 teaspoon cumin powder
5 tablespoons finely chopped parsley
Begin by cleaning and washing the parsley. Finely chop it using a food processor or knife. Peel the onions and grate them finely or chop them, then mix them with the parsley and squeeze out any excess water.
In a large bowl, combine the parsley and onion mixture with the meat, all spices, and salt. Mix well. Knead the mixture with your hands or pound it lightly in the bowl.
Cover the mixture and let it rest in the refrigerator for one hour to allow the meat to firm up.
Take a portion of the mixture roughly the size of a tangerine and shape it into an oval with your hands, or skewer it onto wooden or metal skewers.
Lightly grease a grill pan with oil and arrange the kebabs inside. Cook thoroughly, turning them to ensure even browning. Alternatively, you can bake the kebabs in an oven or grill them over charcoal.
