Soup is one of the most beloved starters worldwide, but when made with potatoes, milk, and cream, it becomes rich, flavorful, and deeply comforting. The herbs used in simple potato soup—or in creamy, cheesy variations—play an important role in enhancing both aroma and color.
This simple potato soup recipe has been tested for over a decade and never fails to impress. Often called Irish Potato Soup, it’s a straightforward, delicious dish that’s sure to excite your taste buds. 2 medium potatoes
1 medium onion
50 g butter
1 cup milk
1 cup chicken broth
2 tbsp breakfast cream (heavy cream)
2 tbsp flour or cornstarch
Salt and pepper to taste

Grate the onion and potatoes, then place them in a pot with 1 cup of water. Cook over low heat until the water almost evaporates.
Add chicken broth and bring to a boil.
Melt butter in a small pan, stir in the flour, and then add this mixture to the soup, stirring to prevent lumps.
Whisk the cream and combine it with milk in a pan, gently heating before adding to the soup.
Adjust salt and pepper, and serve with a wedge of lemon on the side. Enjoy!

1 small head garlic
½ cup Parmesan cheese

3–4 medium potatoes
Remove milk and cream from the fridge to reach room temperature. Wash the potatoes, place in a pot, cover with water, and cook over medium heat until tender. Mash the cooked potatoes with a hand or electric masher.
Cut the garlic head, drizzle with a little oil, season with salt and pepper, wrap in foil, and roast in a 180°C oven until caramelized. Allow to cool, then peel.
Dice the onion finely. Melt butter in a pan over low heat, sauté the onion until golden, then add flour and cook briefly without changing its color.
Add chicken broth, salt, pepper, thyme, mashed garlic, and mashed potatoes. Simmer for about 15 minutes.
Pour a small portion into a bowl, cool slightly, then add milk and gradually mix in cream to temper it before adding to the main pot.
Sprinkle Parmesan over the soup, turn off the heat, and blend all ingredients with an immersion blender or food processor until smooth. Serve in bowls and garnish with chives and extra Parmesan.
