Ingredients for Turkish Bulgur Pilaf

  • Green beans: 250 g

  • Onion: 1

  • Green peppers: 2

  • Tomatoes: 2

  • Tomato paste: 1 tbsp

  • Red pepper paste (optional): 1 tbsp

  • Bulgur: 1.5 cups

  • Vegetable oil: as needed

  • Butter: 1 tbsp

  • Water or broth: as needed

  • Salt and black pepper: to taste

Instructions for Making Turkish Bulgur Pilaf

  1. Heat oil in a pan. Peel and finely dice the onion, then sauté until soft and translucent.

  2. Wash and chop the peppers, then add them to the pan. Add the cleaned and chopped green beans.

  3. Stir in the tomato paste and sauté until its raw smell disappears and it turns a rich color.

  4. Wash and puree the tomatoes, either with a grater or a hand blender, then add them to the pan. Stir until the tomato liquid evaporates and the ingredients are well combined. Season with spices to release their aroma.

  5. Pour enough hot water over the mixture to cover it by about one finger’s width, allowing the green beans to cook. For extra flavor, you can use steamed green beans and replace water with chicken or beef broth.

  6. Add washed bulgur to the mixture along with enough water to soften it. Once the water is absorbed, gather the pilaf in the center of the pot, cover with a lid, and cook over low heat until fully steamed. Finish by adding butter on top.
