  • Rice: ½ cup

  • Water: 3 cups

  • Egg yolk: 1

  • Plain yogurt: 2 cups

  • Flour: 2 tablespoons

  • Water: 1 cup

  • Salt: 1 teaspoon

  • White pepper: To taste

  • Butter: 2 tablespoons

  • Dried mint: 2 tablespoons

  1. Add the rice and 3 cups of water to a pot and place it on the stove until it boils.

  2. Reduce the heat, cover the pot, and wait for the rice to cook and soften.

  3. In a separate bowl, mix the egg yolk, yogurt, flour, and 1 cup of water using a whisk until smooth.

  4. Add this mixture to the cooked rice on the stove and stir. Add the salt and white pepper.

  5. Let the soup start steaming on the stove. During this time, stir the soup continuously without letting it boil.

  6. If the soup becomes too thick, you can add a little water.

  7. In a small pan, melt the butter and add the dried mint. Sauté the mint on low heat for 1 minute, then remove it from the heat.

  8. Add the hot mint to the soup and mix well. Serve the soup in small bowls and garnish with hot mint and fresh mint leaves.
