This soup is made with yogurt and rice, which is why some refer to it as yogurt soup. Yayla Soup was first cooked in the Anatolia region and is famous for its delicious taste. The main ingredients include yogurt, rice, peas, and aromatic herbs, and it is topped with dried mint and paprika before serving.
Rice: ½ cup
Water: 3 cups
Egg yolk: 1
Plain yogurt: 2 cups
Flour: 2 tablespoons
Water: 1 cup
Salt: 1 teaspoon
White pepper: To taste
Butter: 2 tablespoons
Dried mint: 2 tablespoons
Add the rice and 3 cups of water to a pot and place it on the stove until it boils.
Reduce the heat, cover the pot, and wait for the rice to cook and soften.
In a separate bowl, mix the egg yolk, yogurt, flour, and 1 cup of water using a whisk until smooth.
Add this mixture to the cooked rice on the stove and stir. Add the salt and white pepper.
Let the soup start steaming on the stove. During this time, stir the soup continuously without letting it boil.
If the soup becomes too thick, you can add a little water.
In a small pan, melt the butter and add the dried mint. Sauté the mint on low heat for 1 minute, then remove it from the heat.
