Instructions for Making Tasty Chicken Broth

  1. Prepare the Ingredients: Wash the chicken and clean the inside. Cut it into small pieces. Peel and wash the onion, then finely chop it.

  2. Sauté the Onion: In a large pot, heat about 2 tablespoons of oil over medium heat. Add the chopped onion and sauté until softened but not browned.

  3. Brown the Chicken: Add the chicken pieces to the pot and stir to coat them with the onions. Sauté the chicken until it is browned to remove the raw smell.

  4. Add Vegetables and Seasonings: Add the chopped celery, carrot, bay leaf, black pepper, a pinch of salt, and parsley to the pot. Sauté until the vegetables are slightly softened and reduced in volume.

  5. Add Water: Pour the water into the pot until it covers all the chicken and vegetables.

  6. Boil the Broth: Bring the mixture to a boil over medium-high heat. Skim off any foam that rises to the surface using a ladle. Once boiling, reduce the heat to medium-low and let it simmer gently for 3 to 4 hours.

  7. Skim and Adjust: Skim off any foam and fat that rise to the surface every half hour. If too much water evaporates, add a little more water.

  8. Strain and Cool: Strain the broth to remove the solids and let it cool. Once cooled, pour the broth into jars using a ladle and store them in the refrigerator.
