Ingredients for Bean Rice Without Meat

Instructions
Grate the onion and sauté it in a pan with a little oil until golden brown.
Add the chopped green beans and sauté for a few minutes until they are partially cooked.
Add the spices and dissolved saffron, and cook with the vegetables for 8–10 minutes.
Add the pureed tomatoes and let the mixture simmer.
Cover the pan and cook on low heat for about 2 hours. In the last 15 minutes, add tomato paste and a little more saffron to give the sauce a rich color.
Wash the rice thoroughly and soak it in salted water for 2 hours. During cooking, boil it for 5 minutes, then drain.
For the final step, place your desired tahdig (crust) at the bottom of the pot, then layer the rice and bean sauce alternately.
On top of the final layer, add a little butter and cook for about 1 hour.
After an hour (or slightly less), your dish is ready to serve and enjoy.
