According to the Saed News culinary service, Shirazi cake is one of the delicious and traditional Iranian cakes, originating from the beautiful city of Shiraz. With its unique taste and soft texture, this cake has earned a special place among Iranian sweets. The ingredients for this cake include flour, eggs, sugar, yogurt, oil, and rosewater, which together create a delightful taste and a pleasant fragrance. Shirazi cake is typically served at ceremonies and celebrations, and its distinctive features include the use of rosewater and saffron, which give it a unique aroma and color. In addition to its delicious taste, the cake can be beautifully decorated with pistachio powder and almonds, giving it an attractive and elegant appearance, making it perfect for serving guests.
Ingredients for Shirazi Cake:
Sugar: 200g
Water: 80g
Lemon essence: 1/2 teaspoon
Liquid glucose: 1 tablespoon
For preparing sugar syrup (Sherebet):
Step 1: To make the sugar syrup, pour the sugar and water into a suitable pot and place it over medium heat. Stir until the sugar completely dissolves. Be sure the water does not boil before the sugar has dissolved.
Step 2: Once the water reaches a boil, let it simmer for 10 minutes. Then dissolve the lemon essence in a small amount of water and add it to the syrup. Next, add the liquid glucose and bring it to a boil once more. After a few boils, remove the pot from the heat.
Other Ingredients:
White flour: 215g
Eggs: 2
Yogurt: 40g
Sugar syrup: 16g + 2 cups
Rosewater: 72g
Baking powder: 1 teaspoon
Vegetable oil: 70g
Baking soda: ¼ teaspoon
Ground cardamom: 1 teaspoon
Instructions for Making Shirazi Cake:
Step 1: To make the cake, start by placing the eggs, sugar, and ground cardamom in a suitable bowl. Mix well until the sugar fully dissolves, and the mixture becomes fluffy and airy.
Step 2: Next, add the yogurt, rosewater, and sugar syrup, and mix until the ingredients are well combined. Then, combine the flour with the baking powder and baking soda, and sift it twice.
Step 3: Gradually add the flour mixture to the egg mixture and gently stir in a circular motion with a spatula until smooth. Once the cake batter forms, add the vegetable oil and mix until the batter is uniform.
Step 4: Preheat the oven to 220°C. Grease muffin or cupcake pans with a little oil. Then, fill two-thirds of the pans with the cake batter.
Step 5: Place the pans in the oven for 15-20 minutes to bake the cake. Once the cakes are done, heat the sugar syrup and pour it over the cakes while they are still hot, allowing the syrup to soak in.
