Recipe for Yazdi Cake in the Pastry Chef’s Method

Ingredients for Yazdi Cake:

  • Pastry flour: 350 g

  • Sugar: 150 g

  • Eggs: 3

  • Honey: 2 tablespoons

  • Thick yogurt: 50 g

  • Rosewater: 1 tablespoon

  • Baking powder: 1 teaspoon

  • Liquid oil: ½ cup

  • Salt: ¼ teaspoon

  • Cardamom powder: 1 teaspoon

  • Vanilla: ¼ teaspoon

Yazdi Cake Recipe:

Step 1:
First, place the sugar and eggs into a large bowl and whisk them well using a hand mixer until fully combined. Then add the honey, rosewater, vanilla, baking powder, yogurt, cardamom, and salt, and mix everything together well.

Step 2:
Now add half of the oil. Sift the flour twice and add it to the mixture. Mix everything well until it forms a dough-like consistency. Then, add the remaining oil and mix again.

Step 3:
Now that the cake batter is ready, preheat the oven to 200°C (392°F). Arrange the Yazdi cake molds on a baking tray. You can either line the molds with parchment paper or grease them with oil.

Step 4:
Fill the molds about two-thirds of the way with the batter. Use a small knife to score an "X" on top of the batter, which helps the cakes rise beautifully. If desired, sprinkle a little sesame seeds on top.

Step 5:
Place the tray into the preheated oven. The cakes should bake for 15 to 20 minutes until fully puffed and golden. Once the cakes are ready, remove them from the oven and set them aside.

Step 6:
Allow the Yazdi cakes to cool completely at room temperature. Then, arrange them in a serving dish. For a more festive touch, you can melt some chocolate using the double boiler method and drizzle it over the cakes.
