Beetroot Cake

Ingredients:

  • Fresh beetroot: 3 small ones (250g)

  • Soft butter: 250g

  • Lemon zest: 3 teaspoons

  • Powdered sugar: 1 cup

  • Eggs: 4

  • Seedless raisins: 1 cup (150g)

  • All-purpose flour: 2 cups (300g)

  • Baking powder: 2 teaspoons

Recipe

  1. First, peel the beetroots and grate them.

  2. Place the butter and sugar in a bowl and beat well with a mixer until combined.

  3. Next, add the grated lemon zest and mix it in.

  4. Add the eggs one by one, mixing well after each addition until the ingredients are fully combined and smooth.

  5. Now, add the grated beetroot and raisins, and mix the ingredients with a spoon.

  6. Finally, add the flour and baking powder, mixing well until you have a smooth batter.
