Chopped leeks: 2 medium

White bread: 90 g

Boil the potatoes with a pinch of salt. Peel them and mash into a smooth puree. Add milk and butter, mixing well.
Boil the chopped leeks and onion with a little salt for 10 minutes. Combine them with the potato puree, then add cheese, salt, and black pepper.
Crack the egg into a separate bowl and beat it with a fork. Place the bread crumbs in another bowl.
Divide the potato mixture into 12 equal portions and flatten each one. Dip each patty first in the beaten egg, then coat it with bread crumbs so the surface is fully covered.
Fry the patties over low heat for 2–3 minutes on each side, until golden and crispy.
