Zucchini is a low-calorie, nutrient-rich vegetable that can be transformed into a quick, flavorful dinner when combined with whey (kashk). This version is similar to traditional eggplant kashk, with a few twists that make it irresistibly tasty. Serve it with fresh bread and a side of herbs for a satisfying meal.
Zucchini: 4–5 pieces
Grated tomatoes: 3 medium
Onion: 1 large
Grated garlic: 3 cloves
Dried mint: 1 tablespoon
Whey (kashk): 2 tablespoons
Salt, black pepper, turmeric: to taste
Step 1: Fry the zucchini
Peel the zucchini and fry in oil. The size and thickness don’t matter, as they will be mashed later. Once fried, remove the zucchini from the pan. Peel and finely slice the onion.
Step 2: Sauté the onion and garlic
In the same pan, sauté the sliced onion in a little oil. Add dried mint, salt, turmeric, black pepper, and grated garlic, allowing the aroma of the garlic to release.
Step 3: Mash the vegetables
Add the fried zucchini and grated tomatoes to the pan. Using a hand or electric masher, gently mash the mixture until slightly broken down.
Step 4: Add the whey (kashk)
Finally, stir in the thinned kashk. Cover the pan and let the dish simmer until flavors meld together. The creamy zucchini with kashk is now ready to serve.
Adding kashk means you may not need extra salt.
For extra richness, add a small amount of meat stock.
Optional: sprinkle chopped walnuts for added texture and flavor.
