Ingredients for Grilled Chicken Wings with Potatoes and Special Sauce

This recipe makes approximately 4 to 6 servings of spicy wings with roasted potatoes.

  • 200 g sautéed bell peppers

  • 250 g sautéed onions

  • Hot chili (optional)

  • 22 g garlic

  • 1/4 cup vinegar

  • 1 tbsp smoked paprika

  • 1 tbsp oregano

  • 1 tbsp cumin

  • 1 tsp black pepper

  • 1 tsp salt

  • Zest of one whole lemon

  • Bay leaves

  • 1/2 cup olive oil

  • 1 kg chicken wings

  • 500 g potatoes

Step-by-Step Preparation

For the pepper sauce:
Add the sautéed bell peppers, onions, optional chili, garlic, vinegar, spices (smoked paprika, oregano, cumin, black pepper, and salt), and half of the lemon zest along with the juice of half a lemon to a food processor. Blend until smooth.

Pour the blended sauce into a saucepan, add a few bay leaves, and cook over medium heat for 30 minutes. Remove the bay leaves and take the pan off the heat. Add 1/4 cup vinegar, 1/2 cup olive oil, the remaining lemon zest, and the juice of the other half of the lemon. Mix with a hand blender.

Season the chicken wings with 1 tsp salt and marinate them in 1/4 cup of the pepper sauce. Refrigerate for 2 hours.

Cooking the wings and potatoes:
Fry the wings in a skillet with a small amount of vegetable oil until crispy and golden brown. Remove from heat and coat with another 1/4 cup of the pepper sauce. Toss the potatoes in the same sauce and place them in a baking pan.

Preheat the oven to 400°F (200°C) and roast the wings and potatoes for 20 minutes. Turn the wings over and roast for another 20 minutes. Brush the wings with the remaining pepper sauce and serve hot with roasted potatoes. Enjoy!
