  • Permitted food coloring, as needed

  • Bitter almond essence: 1 teaspoon

  • Honey: 5 tablespoons

  • Powdered sugar: 500 g

  • Sweet almonds or peanuts: 500 g

Pour the almonds into boiling water and wait for 5 minutes. Then remove the skins. Dry the peeled, white almonds completely. Grind the almonds using a mixer or meat grinder until you obtain a smooth paste. Add the powdered sugar and bitter almond essence, then blend again until fully combined.

After the sugar and almonds are well mixed and smooth, add the honey dissolved in half a cup of boiling water. Remove the dough and knead it lightly by hand until it becomes ready to use.

You can color the marzipan with permitted food colors in your desired shades. Until use (for cake decoration), keep the dough in a plastic freezer bag. To prevent it from drying out, it is better to store it in the refrigerator and use it within a few days.

To prepare marzipan dough, peel the almonds, or use ready-made blanched almonds. Soak the almonds in water for 24 hours. Then, with gentle pressure, remove the skins. Place them in a colander or spread them on a clean cloth and allow them to dry completely. Next, grind the almonds using a grinder or food processor until powdered.

Place the egg white in a bowl and beat it together with the sugar using an electric mixer until well combined. Add the ground almond powder and mix thoroughly. For convenience, you can transfer the mixture to a food processor fitted with a dough blade and process until the ingredients are fully combined. Once the dough forms, knead it lightly by hand.

After kneading well and the dough comes together, shape it into a cylinder and place it in a freezer bag or plastic wrap. Just like that, your marzipan dough is ready. You can use it immediately or store it in the refrigerator. Take it out about 15 minutes before use, then prepare delicious cakes and pastries. Marzipan dough has a long shelf life.
