  1. Fry the zucchini: Start by frying the zucchini until lightly golden.

  2. Prepare the onion: Grate or finely chop the large onion and sauté it in a little oil until soft and golden.

  3. Add garlic: Grate the garlic and sauté briefly until fragrant.

  4. Mix in walnuts and spices: Add the chopped walnuts, followed by salt, turmeric, and black pepper.

  5. Combine zucchini: Add the fried zucchini to the pan with the sautéed mixture.

  6. Add water and cook: Pour in 1/2 cup of water, cover the pan, and let the zucchini soften.

  7. Mash the zucchini: Once the zucchini is tender and most of the water has evaporated, mash the zucchini using a potato masher or the back of a spoon.

  8. Finish with keshk and mint: Add diluted keshk and dried mint, stir well. Cover the pan and let it cook on low heat for 20 minutes until the dish releases oil.
