Ingredient | Amount |
|---|---|
Pasta | 300 g |
Chicken breast (fillet) | 1 piece |
Mushrooms | 300 g |
Butter | 1 tbsp |
Salt and black pepper | To taste |
Olive oil | 1–2 tbsp |
Milk | 1 cup |
Ingredient | Amount |
|---|---|
Cream | 1 cup |
Garlic | 2 cloves |
Parmesan cheese | 1 cup |
Fresh parsley | 1/6 cup |
Butter | 1/4 cup |
Wash the chicken breast, fillet it, and slice it into thin strips. You can also leave it whole or cut it into cubes depending on your preference.

Place the chicken pieces in a bowl and season with olive oil, salt, and black pepper.

Massage the chicken so the seasoning and oil are absorbed. Cover with plastic wrap and refrigerate for about 1 hour to allow the flavors to develop.

Clean the mushrooms with a damp cloth, remove the skin if needed, and slice them into medium pieces.

Cook the mushrooms over high heat with a little oil to prevent them from releasing too much water.

Remove the chicken from the fridge and fry in a pan using its own oil until fully cooked.

Melt 1/4 cup of butter in a pan over low heat. Grate 2 cloves of garlic and sauté in the melted butter until fragrant.

Add 1 cup of cream to the garlic and cook briefly. For convenience, bring the cream and milk to room temperature before combining them with a whisk.

Gradually add milk to the cream mixture while whisking to avoid lumps. Adjust the amount of milk as needed.

Add Parmesan cheese gradually, stirring gently. Avoid making the sauce too thick.

Add a pinch of salt and black pepper. You can use garlic powder instead of fresh garlic if preferred. Optional: add red pepper or thyme for extra flavor.

Finely chop fresh parsley and add it to the sauce. This step is optional.

Fill a pot with water and bring to a boil.
Add a bit of oil and salt to the boiling water.

Add pasta to the boiling water, stir, and cook to your desired texture. You can cook it slightly underdone or fully cooked.

Add the cooked chicken to the Alfredo sauce. Skip this step if you prefer to serve chicken separately on top of the pasta.

Add the sautéed mushrooms to the sauce and mix.

Drain the cooked pasta.

Add the drained pasta to the sauce and stir to coat. Optionally, reserve half a cup of pasta water and add to the sauce for a looser consistency.

Once the sauce reaches your desired consistency, turn off the heat and serve immediately. Alfredo sauce should be served right after combining with pasta to prevent it from thickening.

Garnish with parsley and cherry tomatoes if desired.

Thyme can be added to the sauce for extra flavor.
Use garlic powder if you don’t like the taste of fresh garlic.
Be careful with butter; too much can overpower the flavor.
You can cook the chicken whole, then slice it into strips for serving.
Adding pasta water makes the sauce smoother and more flavorful.
A squeeze of lemon juice can enhance the flavor of sautéed mushrooms.
Adding parsley is optional.
