Step 1:
Start by washing the mushrooms and slicing them into medium rings. In a suitable pot, bring some water to a boil and add the lemon juice. Then add the sliced mushrooms to the boiling water.

Allow the mushrooms to boil briefly, just until cooked, then quickly drain them and rinse under cold water.

In another suitable pot, combine the butter and vegetable oil and place over low heat until the butter melts.

Add the corn to the melted butter and sauté over high heat. This will allow the corn to absorb the butter’s flavor and soften slightly.

Add the drained mushrooms to the sautéed corn and mix them together.

Add the spices—salt, thyme, black pepper, and red pepper—to the corn and mushrooms. Sauté briefly so the flavors fully combine.

Thin the mayonnaise with a whisk and add it to the mixture, stirring well.
