Ingredients for Kibbeh Arabi:
200 grams ground beef
1 onion, chopped
200 grams rice
150 grams red lentils
50 grams chopped parsley
Oil and saffron, as needed
Salt, pepper, turmeric, and curry powder, as needed
Instructions for Making Kibbeh Arabi:
There are two types of Kibbeh: one made with rice or a rice-lentil mix and the other made with bulgur wheat.
Making Kibbeh with a Rice-Lentil Mix:
Soak the Rice and Lentils: Mix the rice and lentils and let them soak for 2 hours. After soaking, cook the mixture until it's thoroughly cooked.
Prepare the Mixture: After the rice and lentils are cooked, remove them from the heat and let them cool to lukewarm. Then, grind them. Ensure the rice is neither too hot nor too cold.
Making Kibbeh with Bulgur Wheat:
Soak the Bulgur: If using bulgur wheat, soak it in lukewarm water for 4-5 hours. After soaking, drain and process it in a food processor until smooth.
Preparing the Filling:
Sauté the Onion: Heat a pan and sauté the onion until soft. Add some oil and continue frying the onion.
Cook the Meat: Add the ground beef to the onions and sauté well. Use the back of a spoon to break the meat into small pieces. Add spices and mix in the parsley.
Cool the Filling: Remove the mixture from the heat and let it cool.
Assembling the Kibbeh:
Prepare the Rice-Lentil Dough: After cooking, the rice and lentils should form a dough-like consistency. Create a small well in the center and add curry powder, salt, black pepper, and turmeric. Optionally, add some dissolved saffron and knead well.
Shape the Kibbeh: Moisten your hands with water and knead the rice dough. Take a portion of the dough, flatten it in your hand, add some meat filling, fold, and seal. Shape the kibbeh into smooth, crack-free balls.
Fry the Kibbeh: Fry the kibbeh in hot oil over medium heat until golden. Ensure they are not over-fried to avoid burning the rice. If the oil temperature is too low, the kibbeh will absorb too much oil.

The ratio of lentils to rice should be as specified to maintain the kibbeh's consistency.
