According to the Saed News cooking section, zucchini is a low-calorie vegetable rich in nutrients. Now, we’re going to prepare a delicious dinner using zucchini, mixed with kashk (fermented whey), to make a quick and easy evening meal. This dish, Kashk-e Kadoo, is similar to the traditional Kashk-e Bademjan (eggplant and whey dip) but with a few variations. Try this fantastic dish once, and you'll fall in love with its flavor. Serve it with fresh bread and a side of herbs.
Zucchini: 4 to 5 pieces
Grated tomato: 3
Onion: 1 large
Grated garlic: 3 cloves
Dried mint: 1 tablespoon
Kashk (liquid whey): 2 tablespoons
Salt, black pepper, turmeric: as needed
Step 1: Fry the zucchini
First, peel the zucchini and fry them in oil. The size and thickness of the zucchini don’t matter, as they’ll be mashed later. Once fried, remove them from the pan. Peel and finely slice the onion.
Step 2: Add garlic
Sauté the chopped onion in the same pan with some oil. Then add dried mint, salt, spices, and grated garlic. Allow the aroma of the garlic to spread.
Step 3: Mash the mixture
Now add the fried zucchini and grated tomato to the pan. Mash the ingredients together using a potato masher or hand blender.
Step 4: Finish with kashk
Finally, add the diluted kashk to the mixture, cover the pan, and let the dish simmer so the flavors combine well. Your delicious Kashk-e Kadoo is now ready. Enjoy!
Since kashk is salty, there may be no need to add extra salt.
You can enhance the flavor by adding a meat stock cube.
Optionally, chopped walnuts can be added for extra taste and texture.
