Egg yolk – 1
Yogurt – 1 tbsp
Sesame and purslane seeds – as needed
Bell pepper – 1
Ham – 300 g
Mushrooms – 7

Milk – 300 g
Instant yeast – 7 g (or 2.5 tsp)
Sugar – 1 tbsp
Salt – 1 tsp
Egg white – 1
Wheat flour – 500 g
Vegetable oil – 2 tbsp
This dough uses instant yeast, which is mixed directly into the ingredients. If you don’t have instant yeast, you can activate regular yeast by mixing it with sugar and ½ cup of lukewarm water before using.
If using instant yeast, combine it with milk, sugar, and salt in a bowl. Mix well, then add flour and egg white. Stir gradually while adding flour intermittently (not all at once) until the dough starts to come together. Once it forms a rough dough, add the vegetable oil and knead for 10 minutes until soft and elastic. Let it rest in a warm place for 1 hour to rise.
Slice and sauté the mushrooms in a bit of oil until their moisture evaporates. Add chopped ham and bell pepper along with salt and black pepper. Stir for 1 minute, then remove from heat. Mix the egg yolk with yogurt and set aside for brushing later.
Once the dough has risen, punch it down and divide it into 12 equal balls. Flatten each ball, place some filling inside, and form it into a round pastry. Place them on a baking tray and gently press each one to flatten slightly. Cover and let them rise again for 30 minutes.
Brush the tops with the egg wash and sprinkle sesame seeds if desired. Bake in a preheated oven at 180°C (356°F) for 20 minutes until golden and cooked through.
