Step | Instructions |

1 | Place the beef fillet in a freezer bag and freeze for 2 hours to firm it up. |
2 | Slice the fillet very thinly. Grate the onion and extract its juice. |
3 | Marinate the beef slices in the onion juice, cover, and refrigerate for 2 hours. |
4 | After marinating, place the beef in a pan over low heat, cover, and let it cook in its juices. |
5 | Once the liquid evaporates, add olive oil and butter. Sauté the meat, season with salt and pepper, then remove from heat. |
6 | To prepare the sauce, peel and chop the tomatoes. Blend into a purée. |
