Step 1: Preparing the Ingredients
First, let all ingredients come to room temperature to equalize. Measure them out and preheat the oven to 180°C. For cooking without an oven, lightly grease a pot and place it on a heat diffuser for 15 minutes to warm up. Mix the flour and baking powder together, sifting them three times.
Step 2: Whisking the Egg Yolks and Egg Whites
Separate the egg yolks and whites. Whisk the egg whites with an electric mixer until foamy, then add half of the sugar and continue whisking until stiff peaks form. When the bowl is inverted, the mixture shouldn't fall out. In a separate bowl, whisk the egg yolks with the remaining sugar and vanilla until they become pale and creamy.
Step 3: Baking the Tiramisu Cake with or without an Oven
Add the boiling water and instant coffee or espresso to the egg yolk mixture, mixing well with an electric mixer until it thickens. Add the sifted flour and baking powder, and gently fold in the egg whites with a spatula. Line an 18cm cake pan with parchment paper, pour the cake batter into the pan, and bake for 45 minutes in the preheated oven. For cooking without an oven, pour the batter into the pot and bake for 55 minutes with the lid on.
Step 4: Making the Tiramisu Cream Filling
Whisk the egg yolks with sugar until smooth, then place a pot of water on heat and position the bowl on top, stirring constantly for about 10 minutes to cook the mixture using the double-boiling method. Be sure that the bowl does not touch the boiling water. After removing from heat, add the vanilla and let it cool. Cover the bowl with plastic wrap and place it in the fridge to cool completely. Then, add the mascarpone cheese and beat with an electric mixer until smooth. Finally, fold in the whipped cream.
Step 5: Assembling the Tiramisu Cake Without Ladyfinger Biscuits
Fill a piping bag with the prepared cream. Once the cake is baked, slice it and lightly brush each layer with brewed coffee. Then, layer with the prepared cream and sift cocoa powder on top. Repeat this process, layering cake and cream until done. Finish by frosting the top with cream and dusting with cocoa powder. Optionally, you can decorate with whipped cream and serve.
It's best to let the cake sit in the fridge overnight.
