How to Make Meat and Corn Tahchin!

Tahchin is a delicious and elegant dish that can be served at gatherings and special occasions. This versatile recipe can be prepared with either meat or chicken. In this article, we will guide you through making restaurant-style meat tahchin. To achieve the best flavor, it’s important to follow a few key tips. One of the essential ingredients in tahchin is rice.

Ingredients for Meat and Corn Tahchin

  • 250 g lamb

  • 2 cups rice

  • 1 cup full-fat yogurt

  • 1 egg yolk

  • 1 onion

  • 5 tablespoons cooked corn

  • 3 tablespoons saffron

  • 2 garlic cloves

  • Salt, pepper, and oil, as needed

Instructions for Meat and Corn Tahchin

  1. Pour oil into a pot and sauté the chopped onion until golden. Add the diced lamb and minced garlic, and sauté until the meat turns from red to light brown. Pour in one cup of water, cover, and let the meat cook thoroughly.

  2. In another pot, bring water to a boil. Add the rice and salt, and cook until slightly soft. Drain the rice and rinse with cold water.

  3. In a bowl, mix the yogurt, saffron, egg yolk, salt, and pepper. Add the drained rice to this mixture and stir well.

  4. Heat oil in a non-stick pot. Spread a layer of the rice-yogurt mixture and smooth it with the back of a spoon. Shred the fully cooked meat, season with salt, and spread it evenly over the rice layer, pressing lightly.

  5. Add another layer of the rice-yogurt mixture, followed by a layer of cooked corn. Continue layering until all ingredients are used.

  6. Drizzle a little oil over the top, cover with a lid, and cook on low heat with a flame diffuser until the rice is fully steamed.

  7. Once done, carefully invert the tahchin onto a plate and serve hot.
