Stuffed Mushrooms with Cream Sauce

Ingredients:

  • 2 garlic cloves

  • 1 sprig parsley

  • 2 tablespoons oil (20 ml)

  • 1 tablespoon vinegar (5 ml)

  • 3½ cups mushrooms (350 g)

  • 1 cup bell peppers (100 g)

Instructions:

  1. Remove the stems from all mushrooms, wash thoroughly, and hollow out the caps carefully. Trim the inner edge of each cap.

  2. Chop the garlic and parsley, reserving half the garlic and a small amount of parsley.

  3. Sauté garlic in oil until golden brown, then remove. The oil will now be aromatic.

  4. Add chopped mushroom stems and parsley to the pan, season lightly with salt, add a little water, and cook on low heat—ensuring the mixture doesn’t dry out.

  5. Place the hollowed mushroom caps, sprayed lightly with oil, cap-side up, and let them simmer gently.

  6. After eight minutes, season the caps with salt. Blend the cooked stems with the reserved garlic and parsley in a blender. Add vinegar to create a semi-thick cream sauce.

  7. Pour the creamy sauce over the mushrooms and heat for two minutes before serving.


Stuffed Mushrooms with Cheese

Ingredients:

  • Sea salt (for seasoning)

  • 200 g mushrooms

  • Yellow or blue cheese

Instructions:

  1. Remove the stems, clean the mushrooms thoroughly, and place them hollow-side up in a dish.

  2. Sprinkle with salt and fill the caps with cheese.

  3. Cover for two minutes and serve.


Fresh Mushrooms Stuffed with Broccoli Cream

Ingredients:

  • Salt (to taste)

  • 1 small onion (30 g)

  • 1 broccoli (200 g)

  • 2 garlic cloves (10 g)

  • Fresh asparagus

  • Cream cheese

  • ½ cup fresh mushrooms (50 g)

  • 100 g turkey breast, chopped

  • 1 tablespoon extra virgin olive oil (10 ml)

Instructions:

  1. Remove mushroom stems and clean thoroughly.

  2. In a pan with hot oil, sauté broccoli, onion, mushroom stems, garlic, and a pinch of salt. Reserve a small portion of onion.

  3. Mash the sautéed ingredients into a smooth puree, then mix in cream cheese and turkey.

  4. Layer the hollow mushrooms cap-side up in a baking dish, add the cream mixture, and sprinkle with parsley and fresh asparagus.

  5. Bake at 150°C (300°F) for 20 minutes.


Stuffed Mushrooms with Bolognese Sauce

Ingredients:

  • Mozzarella cheese

  • A pinch of salt

  • 1 cup breadcrumbs (100 g)

  • Olive oil and parsley (for seasoning)

  • 8 cups mushrooms (800 g)

  • 3 cups Bolognese sauce (300 g)

  • 2 cups béchamel sauce (200 g)

Instructions:

  1. Heat the béchamel and Bolognese sauces together in a pan, seasoning with salt.

  2. Arrange seasoned mushrooms in a baking dish, cap-side up, and bake at 180°C (356°F).

  3. Fill the mushrooms with the sauce mixture, top with mozzarella and breadcrumbs, and bake for 20 minutes until melted and golden.

  4. Garnish with parsley before serving.


Ham and Cheese Stuffed Mushrooms

Ingredients:

  • 15 large mushrooms

  • 1 bell pepper

  • 3 slices of ham or sausage

  • 1 onion

  • Pizza cheese (as needed)

  • Salt and black pepper (to taste)

Instructions:

  1. Wash mushrooms thoroughly. Remove caps and scoop out the insides. Season the hollowed mushrooms with a little lemon juice and salt.

  2. Dice onion and sauté in oil until soft. Add diced bell pepper and ham, season with salt and pepper, then remove from heat to cool slightly.
