This vegetarian dish is perfect for plant-based diets and makes an excellent option for parties. You can mix mushrooms with other ingredients to create different versions, and if combined with cream, it can even serve as a light and tasty dinner.

1 medium onion
3 garlic cloves
2 tablespoons butter
650 g mushrooms
200 g chopped bacon
2 tablespoons mayonnaise
Salt and pepper, to taste
2 cups shredded cheese (your preferred mix)
¼ cup chopped parsley
2 large baguettes
Preheat the oven: Set to 175°C (350°F) and let it warm. Line a large baking tray with parchment paper.
Cook the onions: Heat a large nonstick pan over medium heat. Chop the onion and sauté it with 1 tablespoon of butter until soft and lightly golden (5–7 minutes). Add grated garlic and cook for another minute, then transfer the mixture to a bowl.
Cook the mushrooms: In the same pan, add the remaining 1 tablespoon of butter. Chop the mushrooms and sauté until soft and their water evaporates (10–12 minutes). Pour the mushrooms over the cooked onions.
Cook the bacon: Chop the bacon and fry it in the same pan for a few minutes until golden. Drain any excess oil before adding the bacon to the mushroom-onion mixture.
Mix the toppings: Add shredded cheese, chopped parsley, mayonnaise, salt, and pepper to the mushroom-bacon mixture. Stir well.
Prepare the bread: Slice the baguettes to the thickness of toast. Arrange them on the baking tray and spread the mushroom mixture evenly over each slice.
Bake: Place in the oven for 15 minutes or until the cheese melts.
Serve: Sprinkle a little parsley on top for garnish and serve immediately.
Tip: If you prefer, you can omit the bacon and replace it with corn for a vegetarian-friendly version.
