Ingredients for 4 People:
Chicken: 600 grams
Carrots: 3 medium-sized
Quince: 2 medium-sized
Onions: 2 large
Potatoes: 2 large
Dried plums (Alu Bukhara): 20 pieces
Tomato paste: 2 tablespoons
Turmeric: 1 teaspoon
Black pepper: 1 teaspoon
Salt and verjuice: To taste
Step 1:
Peel the quince and onions, wash them, and slice them into rings on a cutting board. Cut the quince into large cubes and set aside.
Step 2:
Peel the carrots using a peeler, wash them, and slice them into rings. Set them aside. In a small pan, heat ½ tablespoon of oil on low heat.
Step 3:
Add the tomato paste to the pan and sauté for 1 minute to remove its raw smell. Sprinkle turmeric and black pepper on top, sauté briefly, and then add verjuice along with a bit of water.
