According to Saed News Cooking Service, this cake is very easy to make, and you can get excellent results even with just one egg. Simply preheat the oven, prepare the pan, and mix the ingredients step by step. By beating the egg and sugar until the volume triples and gently folding in the flour and baking powder, you’ll get a soft and elastic cake. For variety, you can split the batter in two and add cocoa to make a zebra cake, or decorate it in a classic style with raisins and walnuts.

Have you ever craved cake, opened the fridge, and realized you only had one egg? That happens to me all the time.

Ingredients for a one-egg cake:

  • Egg: 1

  • Milk: 1 cup

  • Flour: 1 ½ cups

  • Vegetable oil: ¼ cup

  • Sugar: 1 cup

  • Vanilla: a little

  • Baking powder: 1 tsp

Instructions:

  1. Preheat the oven to 180°C (356°F). Grease the pan and dust it with flour. Sift the flour together with the baking powder three times.

  2. Beat the egg, sugar, and vanilla with a mixer for 10–15 minutes until the volume triples and the mixture becomes thick and elastic.

  3. Add the milk and oil and mix just until combined.

  4. Sift the flour gradually over the mixture and fold in gently with a spatula in a circular motion.

  5. Pour the batter into the pan and bake for 40–45 minutes.

I doubled the ingredients to make a zebra cake.

For the zebra cake:

  • Divide the batter into two equal parts.

  • Sift 2 tablespoons of cocoa powder into one bowl and 2 tablespoons of flour into the other. Mix each thoroughly.

  • Using two small ladles, alternate pouring the cocoa and plain batter from the center outward into the pan.

  • Once all the batter is in the pan, use a knife or toothpick to create patterns from the center outward—or reverse, from the top toward the center.

If you don’t want a zebra cake, you can make a simple sponge cake and add raisins and walnuts.

Even with the original one-egg recipe, you can make a zebra cake—doubling the ingredients is not necessary.
