SAEDNEWS: Chicken cake is a popular and delicious Iranian dish made with chicken. It resembles Olivier salad in both ingredients and appearance and is often served at birthday celebrations.
This delightful dish is composed of layers of toast bread and a filling similar to Olivier salad. It’s an excellent option for adding variety to the table at gatherings and is considered an appetizer. Its cake-like appearance makes it an ideal choice for decorating festive tables. Various preparation methods for chicken cake exist, allowing customization based on personal taste and available ingredients. Here's a simple recipe to prepare chicken cake.
Walnuts: 1 cup
Green onions: 1 cup
Parsley: ½ cup
Eggs: 2
Pickled cucumbers: ½ cup
Chicken breasts: 2
Small onion: 1
Toast bread: 1 pack
Mayonnaise: 1 cup
Cinnamon stick: 1
Creamy yogurt: ½ cup
Salt and black pepper: To taste
Prepare the Chicken and Eggs
Pour water into a pot and bring it to a boil over high heat. Peel a small onion, cut it in half, and add it to the boiling water with a cinnamon stick. Add the chicken breasts to the pot and cook for about 30 minutes until fully cooked. (Always use boiling water for cooking chicken.)
Place the eggs in a plastic bag, submerge them in a pot of water, and boil over medium heat until hard-boiled.
Shred the Chicken and Prepare Ingredients
Drain the cooked chicken breasts and let them cool. Remove the bones, shred the chicken with a knife, and place it in a bowl. Peel the boiled eggs, grate them, and add them to the chicken. Wash and finely chop the green onions and parsley, then add them to the bowl.
Mix the Filling
Add creamy yogurt, mayonnaise, chopped pickled cucumbers, black pepper, and salt to the chicken mixture. Chop the walnuts finely and add them to the bowl. Mix all ingredients thoroughly until well combined.
Assemble the Cake
Place the toast slices on a cutting board and trim off the edges with a knife. Arrange the bread slices to cover the base of your serving dish. Spread a layer of the chicken mixture over the bread, ensuring the bread is fully covered. Repeat with alternating layers of bread and chicken mixture until all the mixture is used up. Cover the top and sides of the cake with the remaining mayonnaise.
Chill the Cake
Place the chicken cake in the refrigerator for 2 hours to allow the flavors to meld and the mixture to absorb into the bread.
Decorate and Serve
Remove the cake from the refrigerator and decorate it with tomatoes, parsley, or corn. Enjoy!
The filling consistency should be similar to Olivier salad, and you can adjust the ingredients to your preference. For instance, modify the quantities of yogurt and mayonnaise or increase/decrease the eggs and chicken.
You can use any type of deli meat or substitute turkey for chicken in the filling.
