Ingredients: For the chicken:

  • Chicken thighs: as desired

  • Bell pepper: 1 medium

  • Curry powder, salt, black pepper: as needed

For Dami Gojeh:

  • Rice: 2 cups

  • Tomatoes: 4 medium

  • Onion: 1 medium

  • Potato: 1 medium

  • Tomato paste: 2 tablespoons

  • Turmeric, salt, black pepper: as needed

  • Brewed saffron: as needed

  • Oil

Steps to prepare:

Cooking the Chicken:

  1. Mix the chicken thighs with onion, bell pepper, and spices, then cook them in a pot with a little water until fully cooked.

Preparing the Dami ingredients: 2. Soak the rice beforehand. 3. Dice the onion and sauté in oil until golden. 4. Dice the potato and add to the onion, sautéing it. 5. Grate or crush the tomatoes and add them to the mixture. 6. Add the tomato paste, turmeric, salt, and black pepper, then sauté until the raw smell of the paste is gone.

Making the Saffron Crust: 7. Grease the bottom of a suitable pot with a little oil. 8. Arrange the cooked chicken thighs at the bottom of the pot, then pour some brewed saffron on top.

Adding the Rice: 9. Drain the soaked rice and place it over the chicken. 10. Pour the tomato and vegetable mixture on top of the rice. 11. Add a little boiling water so that it is about one finger's width above the rice.

Cooking: 12. Cover the pot with a lid and reduce the heat. 13. Allow the rice to cook for 45 minutes to an hour.

Important Tips:

  • To get a more colorful saffron crust, you can use more brewed saffron.

  • If you want a crispier crust, you can grease the bottom of the pot with more oil.
