SAEDNEWS: Cardamom cookies are one of the simple and delicious Iranian sweets often served to guests. These cookies are also internationally recognized and are popularly known by the same name in Iran. Below is a step-by-step guide to making cardamom cookies.
Butter: ½ cup (113 grams), softened
Shortening: ½ cup
Rosewater: 1 tablespoon (or vanilla extract as an alternative)
Powdered sugar: ½ cup
Flour: 2½ cups
Ground cardamom: 1½ teaspoons
Combine the softened butter and shortening in a mixing bowl.
Use a mixer to beat them until light and fluffy.
Gradually add the powdered sugar and mix well.
Add the rosewater (or vanilla extract) and ground cardamom, mixing until thoroughly combined.
Gradually sift in the flour and mix with a spoon until a dough forms.
Add the flour little by little to ensure the dough doesn't become too stiff. The dough should not stick to your hands.
(You may have some leftover flour depending on the consistency.)
Place the dough in a plastic bag or wrap it in cling film.
Refrigerate the dough for at least one hour to firm it up.
Roll out the dough between two sheets of parchment paper to prevent sticking.
Use cookie cutters to shape the dough into desired shapes.
Place the shaped cookies onto a baking tray lined with parchment paper.
Tip: Chill the shaped cookies in the refrigerator for 10 minutes before baking to prevent them from losing shape in the oven.
Preheat the oven to 175°C (347°F).
Bake the cookies for 10 minutes or until they are lightly golden around the edges.
Let the cookies cool completely on the baking tray before removing them.
Once cooled, sift powdered sugar over the cookies for decoration.
Cardamom cookies are perfect for serving to guests or enjoying with a cup of tea. Their fragrant aroma and delicate flavor make them a delightful treat.
