Ingredients for Sausage Omelet

  • Sausage: 120 grams

  • Large Eggs: 6

  • Potatoes: 4

  • Fresh Rosemary: 2 sprigs

  • Onions: 2

  • Lemon: 1

  • Fresh Parsley: 1 bunch

  • Olive Oil: As needed

  • Pepper: As needed

  • Salt: As needed

How to Make Sausage Omelet

  1. Preheat the oven to the highest setting until fully heated.

  2. Peel the potatoes and cut them into large chunks.

  3. Place the potatoes in a pan of boiling salted water and cook until tender. Then, drain them using a colander and let them dry completely.

  4. Beat the eggs well in a large bowl using a fork. Season with salt and pepper, then set aside.

  5. Cut the sausages into 1-centimeter pieces.

  6. Prepare a non-stick oven-safe skillet. Add the sausages and potatoes to the pan and place it in the oven. After about 5 minutes, when the sausages and potatoes become slightly golden and crispy, remove them from the pan using a spatula and set aside.

Prepare the rosemary leaves.

Add the rosemary leaves to the hot oil in the pan. They will begin to crisp immediately. Quickly pour the beaten eggs over the rosemary. Then, evenly distribute the potatoes and sausages across the pan.

Place the skillet back in the oven until the omelet turns golden brown and is partially set.

Prepare the garnish.

Chop the parsley leaves and squeeze the lemon juice. Peel and finely chop the onions.

While the omelet is cooking, combine the onions, lemon juice, a pinch of salt and pepper, and a little olive oil in a bowl. Mix the onions with your hands, then add the parsley leaves to the mixture.

Spread a small amount of this garnish over the omelet before serving.
