SAEDNEWS: Kuymak, also known as Kachi in Azerbaijan, is a rich and tasty dessert made from simple ingredients like flour, sugar, and oil. Essentially, Kuymak is the same as Kachi, but in cities like Tabriz, Ardabil, and other Turkish-speaking regions, it is known by this name.
According to the Saed News Cooking Service, Qovımaq, also known as Kachi, is a wholesome and very tasty dessert that is particularly beneficial for women who have recently given birth, are menstruating, or are feeling weak. This dessert can be prepared in various ways, and today we will show the traditional method from the people of Baku, Azerbaijan.

Wheat flour: ½ cup
Butter: 50 g
Turmeric: a pinch
Saffron (brewed): a little
Water: 2 loosely filled cups
Sugar: ⅓ cup
Ground cinnamon: a pinch, for serving
To start, melt the butter in a non-stick pan over low heat. Add the flour and sauté for 2–3 minutes until the raw flavor disappears and the aroma develops. Next, add turmeric and continue to sauté briefly, then add sugar and mix well.
Gradually pour in cold water while stirring to break up any lumps and create a smooth mixture. Then add the brewed saffron and stir again.
Cover the pan and avoid stirring. Let it cook until all the water evaporates and a golden crust forms at the bottom.
Once the water is fully absorbed, use two spoons to carefully roll the dessert from one side of the pan. Your Qovımaq is now ready.
Transfer the dessert to a serving dish, sprinkle with ground cinnamon, and enjoy it with a cup of freshly brewed tea.
