Ingredients for Lentil Soup (Adasi) for 3 People
Water: 4 cups + 3 cups hot water
Lentils: 1 cup
Sunflower oil: 2 tablespoons
Butter: 1 tablespoon
Onion (finely chopped): 1
Salt: to taste
Fresh ginger (peeled and grated): 1 1/2 teaspoons
Garlic (finely chopped): 4 cloves
Tomato (diced): 400 grams
Tomato paste: 2 tablespoons
Heavy cream or whole milk: 1/2 cup
Fresh cilantro leaves (chopped): 1/4 cup (for garnish)

Step 1
To make delicious and special Adasi in the traditional method, first fill a large bowl with water and soak the lentils for 30 minutes to 2 hours, depending on their type. After this time, drain and clean the lentils.
Step 2
If you are using local lentils, make sure to clean them carefully as they often contain small stones. Finely chop the onion and sauté it in a pot with 1 tablespoon of olive oil.

Continue sautéing the onions until they become soft. Add a little turmeric and continue to sauté until the turmeric and onion are well combined. Add the tomato paste to the onion and turmeric mixture.

Sauté well until the tomato paste is thoroughly cooked. This step removes the raw taste and smell of the tomato paste, giving the Adasi a more vibrant color.

Add the drained lentils to the pot along with some salt and black pepper. Optionally, sauté the lentils a bit. Add 6 cups of water to the pot and cover it, allowing the lentils to cook slowly.

Increase the heat to bring the water to a boil quickly. Once boiling, reduce the heat to let the Adasi cook on a low flame. In a small pan, sauté the flour with 1 tablespoon of olive oil.

Sautéing the flour removes its raw taste and gives it a creamy color. After sautéing, add the flour to the Adasi pot. This step thickens the Adasi nicely.

Dice the potatoes into small cubes for quicker cooking, then rinse them with cold water and set aside. Once the lentils are half-cooked, add the diced potatoes to the pot.

Cooking the potatoes for 30 minutes is sufficient. Adding them too early will make them mushy and ruin the appearance of the Adasi. Once the Adasi is ready, you can garnish it with sesame seeds, fresh parsley, or fried onions as desired.
