Ingredients

300 grams of beef shank (cut into small pieces)

2 large onions (chopped)

2 tablespoons tomato paste

1 teaspoon turmeric

Salt and black pepper to taste

1 tablespoon dried rose petals

1 piece of cinnamon stick

5-6 black peppercorns

3-4 green cardamom pods

1 teaspoon brewed saffron

50 grams of butter

Orange peel slivers (to taste)

Slivers of almonds and pistachios (to taste)

2 tablespoons barberries

Instructions

Follow these steps to prepare this delicious dish:

Sautéing the Onions and Meat: First, sauté the onions in some oil until they become golden and soft. Then, add the chopped beef shanks to the onions and sauté until the meat changes color. Add turmeric and black peppercorns, and stir the ingredients until the spices release their aroma.

Adding Spices and Tomato Paste: After sautéing the meat, add the tomato paste and mix well until the raw taste of the paste is gone. Then, add the cinnamon stick, cardamom pods, and dried rose petals to the pot.

Cooking the Meat: Add a few cups of water to the pot until the meat is submerged. Cover the pot and let the meat cook slowly over low heat until it becomes tender.

Preparing the Toppings: At this stage, sauté the orange peel slivers, which have been previously soaked to remove bitterness, in butter. Then, sauté the almond and pistachio slivers in butter until their aroma is well released. Sauté the barberries with some butter and saffron as well.

Adding Saffron: In the final stage of cooking the meat, add the brewed saffron to the stew to complete the aroma and color of your Gheymeh Nesar. Let the stew simmer for a few more minutes so the flavors meld together.

Serving Gheymeh Nesar: Serve Gheymeh Nesar with saffron rice. For garnish, sprinkle the mixture of slivers (orange, almond, pistachio) and barberries on the rice. This garnish not only adds beauty to the dish but also imparts a unique flavor.

Tips

To reduce the bitterness of the orange peel slivers, you can boil them several times and discard the water each time.
