Ingredients:

  • 150g water

  • 150g milk

  • 2g instant yeast

  • 10g salt

  • 20g sugar

  • 500g bread flour

  • 30g butter

Syrup Ingredients:

  • 100g grape syrup

  • 200ml water

  • Sesame seeds

Preparation:

Mix the dry ingredients together and gradually add the liquids (slowly add the liquids). Start kneading until the dough comes together. Then add the soft butter at room temperature and continue kneading until you get a soft, smooth dough with a shiny surface. Place the dough in a greased bowl and let it rest at room temperature for an hour. Afterward, transfer it to the fridge for as long as you prefer (I rested mine for 24 hours).

After removing the dough from the fridge, let it rest at room temperature for an hour to reach room temperature. The temperature of the room I let the dough rest in was 26°C, and the fridge temperature was set to 1°C. The dough only rose slightly in the fridge, and the ambient temperature and fridge temperature have a significant effect on the dough's rise.

If you prefer not to let your dough rest in the fridge, you can increase the amount of yeast to 5-10g. The amount of yeast also affects the dough's rise and fermentation process.
