Duchess potatoes are a classic French treat made from mashed potatoes, egg yolk, butter, and sometimes cheese. They are warm, silky, and incredibly soft—a perfect appetizer for any occasion.

Ingredients for Duchess Potatoes
3 medium potatoes
2 tablespoons butter
1 egg yolk
Salt and black pepper, to taste
Paprika powder (optional)
Instructions
Wash the potatoes with their skins on and boil them in water until tender.
Once cooked, peel the potatoes and grate them while still hot.
Add 2 tablespoons of butter to the grated potatoes and mix thoroughly.
When the potatoes have cooled slightly, stir in salt, black pepper, paprika (if using), and the egg yolk.
Fit a piping bag with a star nozzle and fill it with the potato mixture. Pipe the potatoes onto an ungreased baking sheet in flower-like shapes.
Bake in a preheated oven at 200°C (392°F) until the tops turn golden and the potatoes are cooked through.
For a more golden and appealing finish, brush the tops lightly with butter or sprinkle a little cheese before baking.
Tips: The potato mixture is slightly sticky. If shaping with a star nozzle proves difficult, use a plain piping bag. Arrange the potatoes in a single layer on the baking sheet for a crispier top.
