1 medium cauliflower
2 tablespoons olive oil
1 tablespoon lemon juice
2 green onions
Salt, black pepper, turmeric, onion powder, garlic powder, and red chili powder to taste
Preheat your oven to 200°C (392°F). Remove the cauliflower stem and break the cauliflower into smaller florets by hand. You can cut them larger or smaller depending on your preference. Rinse the florets several times in water and drain.
In a bowl, mix olive oil, lemon juice, all spices, and salt. Optionally, add a bit of paprika for extra flavor. Chop the green onions after washing and set them aside.
Line a baking tray with parchment paper or a non-stick sheet and lightly grease it. Place the cauliflower florets on the tray and brush them with the oil and spice mixture to coat evenly. Make sure to turn the florets so the flavor reaches all sides.
Bake in the preheated oven for 30 minutes until cooked and slightly roasted. During baking, brush the florets with the marinade several times. For a golden finish, turn on the grill at the end. Once done, remove from the oven and sprinkle with chopped green onions. Serve with your favorite sauce or dip. Enjoy!
Cauliflower is a great source of vitamins such as C, B, and E. Its fiber not only supports digestive health but also helps you feel full, making it ideal for weight-loss diets.
It also provides essential minerals like magnesium, phosphorus, calcium, and potassium, along with antioxidants—especially beneficial for people living in busy urban environments. The fats in cauliflower are mostly unsaturated, with some omega-3 content, making roasted cauliflower a healthy and nutritious snack.
