One of the most renowned dishes in Syria is undoubtedly Moutabal or Baba Ghanoush, made with roasted eggplant, plenty of garlic, olive oil, salt, yogurt, lightly toasted wheat flour, black pepper, and pomegranate seeds.
A similar dish is also prepared in northern Iranian cities, known as Kaleh Kabab or Bademjan Kebab (grilled eggplant).
2 eggplants
1 tablespoon yogurt
3 tablespoons tahini (sesame paste)
1 lemon
2 cloves garlic
2 tablespoons olive oil
1 green chili pepper
Salt and black pepper (to taste)
You can adjust the amount of lemon juice based on your preference.
To accompany this appetizer, you can cut yufka dough into triangles, season them with red sauce, salt, and black pepper, and bake them in the oven at 170°C (340°F) for 7 minutes for a crispy side.
