  • Sugar: 1 tablespoon for every 5 ears of corn

How to Make Canned Corn

For making canned corn, use Mexican corn cobs. These cobs are specifically meant for Mexican corn and are ideal for canning. The unique feature of these cobs is that they have large, sweet, and softer kernels, and are free of husks.

First, you need to remove the kernels from the cobs. There are different methods for this, but one of the best ways is to cut a row of kernels off with a knife, then push the remaining rows toward the one you’ve just cut off with your hands. This method helps remove the kernels cleanly and evenly.

After removing the kernels, place them in a colander and rinse them with water. Then, add some water to a pot and bring it to a boil. While boiling, add one tablespoon of sugar and a quarter teaspoon of salt for every 4 cobs. The salt helps firm up the kernels, while the sugar makes them softer. When you add both, the corn becomes delicious, just like the ones you find in the market. Once cooked, let the corn cool, then transfer it along with the water from the pot into jars, sealing them tightly.

Place the jars into a pot and fill the pot with water, ensuring the water level reaches at least halfway up the jars. Put the pot on the stove and allow the water to simmer for about 30 minutes on low heat.

After this time, remove the jars and place them upside down. If any water escapes from the jars, it means the canning process has not been successful, and you should consume that jar immediately. If no water leaks out, allow the jar to cool completely before storing it.
